Try something new and get your vegetables too! Who says eating super-healthy eating can’t be tasty.
Experiment with other fresh farmers market greens. With a little creativity it is easy to add more market greens to your meal plan. Spinach or kale could be used instead of the Swiss Chard.
Spaghetti With Swiss Chard1 pound spaghetti 4 tablespoons olive oil 1/3 cup chopped fresh mushrooms 2 garlic cloves, minced 2 1/2 cups escarole, cut into 1-inch strips 1/3 cup white wine (or water) 1/3 cup cherry tomatoes 1/4 teaspoon crushed red pepper 1/3 cup grated Parmesan cheese
Cook spaghetti in a large pot of boiling salted water until tender but not overdone. Drain, rinse and set aside.
Heat olive in a large heavy saucepan over medium heat. Add mushrooms and cook just until turning light brown. Toss in garlic and cook for about 1 minute. Quickly add wine and Swiss card to keep the garlic from turning brown and bitter. Reduce heat, and cook until greens are wilted, about 5 minutes. When the green are about fully cooked add the cherry tomatoes. Season with red pepper, salt and pepper to taste. Stir gently to combine. Serve warm with fresh grated Parmesan cheese. Serves 6.
