French pastry transforms into an edible object d’art in Mendl’s Courtesan au Chocolat. The regal name is befitting for a sculpted dessert with such a true European look and rich taste.

Mendl’s Courtesan au Chocolat is a vision of a fanciful dessert from a child’s storybook tale. Would Cinderella have enjoyed such an opulent end to a meal?

Three Layers of Lavishness

Puffs of delicate light as air choux pastry come in three sizes that resemble a snowman turned baked good. Each dollop of pastry has a smooth silky filling of chocolate cream otherwise known as crème pâtissière of chocolate.

The bottom base of the largest choux ball is anchored with a scallop of frosting that resembles a Belgian white lace doily. The bright white frosting sets off the Easter egg-like pastel colored choux balls, one each of soft pink, faded lavender and Key lime green.

Ruffly beads of robin egg blue frosting acts as sweet cement and holds the towering stack of choux balls together. A piped rosette in blue topped by pale green pistachio with a glittery gold leaf makes a crowning finish.

Much More Than A Cream Puff

While I am no choux pastry fan and avoid eating cream puff like desserts that tend to be chewy-almost-dry, this was different. Mendl’s Courtesan au Chocolat is no cream puff.  In fact, the two desserts are nothing more than distant cousins.

A Childhood Dream Come True

Presentation is everything. The dreamy look of dainty pastry balls glued together with piped frosting was too much to resist. Plus Patisserie 46 had stacks of light powdery pink Mendl’s boxes as a backdrop. There I was a 40-year-old kid in a pastry shop.
